Method

  1. Roast. Toss potatoes and leeks with the oil in a baking dish; roast at 200C for 25 minutes until softening.
  2. Cream. Whisk cream, stock, mustard, lemon zest and juice; pour over, nestle in the seasoned salmon, and roast 14-16 minutes more until the fish flakes.
  3. Finish. Scatter dill and serve with lemon wedges - straight from the dish, obviously.
