Creamy Salmon, Leek & Potato Traybake
Salmon roasted over creamy leeks and potatoes in one dish - a DHA dinner with almost nothing to wash up afterwards.

Ingredients
for 2 people
- 2salmon fillets (140 g each)
- 500 gbaby potatoes, halved
- 2leeks, sliced
- 2 tbspolive oil
- 150 mlsingle cream
- 100 mlvegetable stock
- 1 tbspDijon mustard
- 1lemon, half zested and juiced, half in wedges
- 10 gdill, chopped

Method
- Roast. Toss potatoes and leeks with the oil in a baking dish; roast at 200C for 25 minutes until softening.
- Cream. Whisk cream, stock, mustard, lemon zest and juice; pour over, nestle in the seasoned salmon, and roast 14-16 minutes more until the fish flakes.
- Finish. Scatter dill and serve with lemon wedges - straight from the dish, obviously.
