Method

  1. Roast. Toss potatoes and leeks with the oil in a baking dish; roast at 400F (200C) for 25 minutes until softening.
  2. Cream. Whisk cream, stock, mustard, lemon zest and juice; pour over, nestle in the seasoned salmon, and roast 14-16 minutes more until the fish flakes.
  3. Finish. Scatter dill and serve with lemon wedges - straight from the dish, obviously.

Is this safe while breastfeeding?

Yes - salmon is one of the fish worth actively keeping on the menu while breastfeeding, not just tolerated. It counts as oily fish, so the rhythm to know is 1-2 portions a week, with a maximum of 2. Nothing else on the tray raises a flag: the cream is pasteurized, the mustard and leeks are unremarkable in the best way, and the fish roasts through to flaking.

Substitutions & allergens

  • Swap the single cream for an unsweetened oat cream - removes dairy; the mustard keeps the sauce lively either way.
  • Swap salmon for trout fillets - a like-for-like oily fish, so the omega-3 fit stays intact.
  • If fish is off the table entirely, chicken thighs roast well in the same cream - removes fish, but the omega-3 story is the reason this dish exists, so it becomes a different dinner.
  • Swap dill for parsley or chives, and leeks for onion and fennel if that is what the fridge offers.

Storage & reheating

Cool leftovers and refrigerate within 1-2 hours; eat within 48 hours, reheated until steaming hot all the way through and only once, per FSA chilling guidance. If that window will not happen, freeze portions on the day of cooking - the cream may loosen a little on thawing, and stirring as it reheats brings it mostly back. Defrost in the fridge, never on the counter, and eat within 24 hours.
