Ginger Chicken & Rice Soup
A gentle, gingery chicken and rice soup - the first-trimester classic for days when only warm, plain and salty will do.

- 1 tbspolive oil
- 4chicken thighs, boneless and skinless
- 1onion, chopped
- 2carrots, sliced
- 25 gfresh ginger, sliced
- 100 gjasmine rice
- 1.3 lchicken stock
- 1lemon, in wedges
- 10 gcoriander (optional)

Method
- Build. Soften the onion in the oil, add carrots and ginger for 2 minutes, then the chicken and stock.
- Simmer. Simmer 20 minutes; lift out the chicken, shred it, and return with the rice for 12 minutes more until tender.
- Serve. Season well and serve with lemon. The ginger is doing quiet anti-nausea work under the comfort.
