Method

  1. Toss. Heat the oven to 400F (200C). Toss potatoes, carrots and onion with oil on a big tray; nestle in the seasoned chicken.
  2. Glaze. Whisk honey, mustard and lemon; brush over the chicken.
  3. Roast. Roast 40-45 minutes, basting once, until the chicken is cooked through and the potatoes are golden in the sticky juices.

Is this safe during pregnancy?

Yes - as written it follows the standard pregnancy food-safety rules. Poultry needs to be cooked all the way through, which is what NHS guidance on foods to avoid asks, so check the thickest thigh at the bone before serving: the juices should run clear with no pink left. Beyond that, just give the vegetables and thyme a good wash before they go on the tray - everything else here sits on the safe list.

Substitutions & allergens

  • Skinless chicken breasts work instead of thighs - add them halfway through the roast so they stay juicy.
  • Maple syrup can take honey's place in the glaze, same amount.
  • Dijon makes a smoother, slightly sharper glaze if wholegrain mustard is not in the fridge.
  • Sweet potato wedges or any waxy potato roast happily in place of new potatoes.
  • Dried thyme replaces the sprigs - a couple of pinches is plenty.

Storage & reheating

Cool the tray quickly, get leftovers into the fridge within 1-2 hours, and eat them within 48 hours, reheated steaming hot all the way through and only once, per FSA chilling and reheating guidance.
