One-Pan Chicken & Rainbow Vegetables

Chicken thighs roasted over five colors of vegetables - one pan, no thinking, nothing to stand over.

A hands-off roast where chicken thighs cook over a tray of vegetables until the edges catch and sweeten. It suits pregnancy evenings when standing at the stovetop is the last thing you want: the oven does the work while you sit down. Leftovers hold together well, so tonight's tray can quietly become tomorrow's lunch.

Ingredients

  • 6bone-in and skin-on chicken thighs
  • 1red onion, in wedges
  • 2bell peppers, in chunks
  • 1zucchini, in half-moons
  • 300 gbaby potatoes, halved
  • 150 gcherry tomatoes
  • 3 tbspolive oil
  • 1 tspsmoked paprika
  • 1 tspdried thyme
  • ¼ tspsalt

Method

Before you start. Heat the oven to 400°F (200°C).

  1. Toss. Tumble the potatoes, onion, peppers, zucchini and tomatoes onto a large sheet pan. Add 2 tablespoons of the oil, the paprika, the thyme and most of the salt and pepper, and toss with your hands until everything is glossy.
  2. Top. Rub the chicken thighs with the last tablespoon of oil and the remaining salt and pepper, then settle them on top of the vegetables, spaced apart so hot air reaches every side. Wash your hands well after handling the raw chicken.
  3. Roast. Roast for 40 minutes, until the chicken is deep golden, the juices run clear with no pink at the bone, and a thermometer in the thickest thigh reads 165°F (74°C). The vegetable edges should char here and there.
  4. Rest. Rest the pan for 5 minutes so the juices settle back into the meat, then serve straight from the pan, spooning the pan juices over the vegetables.

Is this safe during pregnancy?

Yes - this is one of the easier dinners to say that about, as long as the chicken is cooked right through, and the recipe's own note covers exactly how to check. Substitutions & allergens

  • Swap bone-in thighs for chicken breasts - leaner and quicker, but check them early so they do not dry out before the vegetables finish.
  • Swap baby potatoes for sweet potato chunks - similar roast time, more color on the tray.
  • Swap zucchini for broccoli or cauliflower florets - add them partway through so they char rather than collapse.
  • Out of thyme? Dried oregano or rosemary roast just as well here.

Storage & reheating

Cool leftovers and get them into the fridge within 1-2 hours, then eat within 48 hours, per FSA chilling guidance. Reheat until steaming hot all the way through, and only once - this matters most for the chicken. Freeze on the day of cooking if leftovers will outlast that window; the chicken holds up better than the vegetables, which come back softer. Defrost in the fridge, not on the counter, and eat within 24 hours.
