- 1onion, chopped

- 2sweet potatoes, in chunks
- 480 gcanned chickpeas, drained
- 400 gcanned chopped tomatoes
- 80 gpeanut butter
- 600 mlvegetable stock
- 100 gkale, shredded

Method
- Base. Soften the onion; add garlic, ginger and spices for 1 minute.
- Stew. Add sweet potato, chickpeas, tomatoes, stock and peanut butter; simmer 25 minutes until thick and tender.
- Greens. Stir in kale for 3 minutes, season, and serve with lime - rice optional, spoon mandatory.
