Method

  1. Whip. Put the cream cheese in a small bowl and beat it with a fork for about 30 seconds, until it loosens from firm to soft and spreadable, with no lumps left against the side.
  2. Season. Grate the lemon zest straight into the bowl, add the pinch of flaky salt, and stir for 15 seconds, until the zest is evenly flecked through and the cheese smells clearly lemony.
  3. Spread. Lay the crackers on a plate or board and spread each one with a generous teaspoon of the lemony cream cheese, right to the edges so every bite carries some.
  4. Top. Scatter the finely chopped crystallized ginger over the crackers, pressing the pieces lightly into the cheese so they stay put. Eat right away, while the crackers are still crisp.
  5. Stash. Keep the cracker box and the chopped ginger beside the bed overnight, so a few bites are ready before you get up. The topped crackers are best made fresh, not stored.
