Chicken Noodle Soup for the Soul (and Freezer)
The classic chicken noodle soup, made properly and made big - half for now, half frozen for the day everything goes sideways.

Ingredients
for 2 people
- 1 tbspolive oil
- 1onion, chopped
- 3carrots, sliced
- 3celery sticks, sliced
- 2garlic cloves, chopped
- 5chicken thighs, boneless and skinless
- 1.5 lchicken stock
- 1bay leaf
- 120 gegg noodles
- 15 gparsley, chopped
- 1lemon, half juiced

Method
- Base. Soften the vegetables in the oil 6 minutes; add garlic, chicken, stock and bay.
- Simmer. Simmer 25 minutes; shred the chicken back in and add noodles for their packet time.
- Brighten. Finish with parsley and lemon. Freeze half before the noodles if you can resist; add fresh noodles on reheat.
