Banana Bread Baked Oatmeal Squares
Banana-bread-flavored baked oats cut into squares that freeze and reheat one at a time - the batch-bake that feeds two weeks of mornings.

- 180 grolled oats
- 3very ripe bananas, mashed
- 2large eggs
- 400 mlwhole milk
- 2 tbspground flaxseed
- 1 tspbaking powder
- 1 tspcinnamon
- 2 tbspmaple syrup
- 60 gwalnuts, chopped
- a pinch ofsalt

Method
- Mix. Heat the oven to 180C. Whisk eggs, milk, banana, maple and flax; stir in oats, baking powder, cinnamon, salt and most of the walnuts.
- Bake. Pour into a lined 20 cm dish, top with remaining walnuts, and bake 35-40 minutes until set and golden.
- Portion. Cool, cut into 9 squares, and freeze between parchment. Microwave one from frozen in about a minute.
