Method

  1. Mix. Heat the oven to 180C. Whisk eggs, milk, banana, maple and flax; stir in oats, baking powder, cinnamon, salt and most of the walnuts.
  2. Bake. Pour into a lined 20 cm dish, top with remaining walnuts, and bake 35-40 minutes until set and golden.
  3. Portion. Cool, cut into 9 squares, and freeze between parchment. Microwave one from frozen in about a minute.
