Banana, Oat & Flax Breakfast Muffins

One-handed breakfast you can eat standing up, rocking a baby - bake a batch, freeze, defrost overnight.

Sturdy little muffins in which mashed banana does the sweetening and oats do the structure, closer to breakfast than to cake. They earn their newborn-weeks place by being good cold, in one hand, at whatever hour the day actually begins.

Ingredients

  • 3ripe bananas, mashed
  • 2large eggs
  • 200 grolled oats
  • 3 tbspground flaxseed
  • 1 tspbaking powder
  • 1 tspcinnamon
  • 3 tbspmaple syrup
  • 60 gwalnuts, chopped (optional)

Method

Before you start. Heat the oven to 350掳F (180掳C).

  1. Batter. Mash the ripe bananas in a large bowl until smooth, then whisk in the eggs and maple syrup. Stir in the oats, ground flaxseed, baking powder and cinnamon to a thick, spoonable batter.
  2. Rest. Fold in the chopped walnuts, if you are using them, then let the batter stand for 5 minutes. The oats and flaxseed will drink up the moisture and the mixture will thicken noticeably.
  3. Fill. Line a muffin tin with paper liners and spoon the batter in, filling each about three quarters full - makes roughly 10, scaling with your servings. Level the tops with the back of the spoon.
  4. Bake. Bake for 22 to 25 minutes, until the tops are set and spring back when pressed lightly and a skewer pushed into the middle of one comes out clean.
  5. Cool. Let the muffins sit in the tin for 5 minutes, then move them to a rack to cool completely. Freeze what you will not eat in 3 days; 30 seconds in the microwave revives one.

Is this safe while breastfeeding?

Yes - this fits normal breastfeeding eating, with nothing to limit or time around feeds. One honest framing note: oats and flaxseed are classic lactation-kitchen ingredients, but a randomized trial of lactation cookies built on exactly these came up null, and supply tracks how often the baby feeds. Enjoy them as a nourishing one-handed breakfast, not as a supply strategy.

Substitutions & allergens

  • Use certified gluten-free oats - removes gluten.
  • A spoonful of extra ground flaxseed soaked in water stands in for each egg - removes eggs.
  • The walnuts are already optional; leaving them out drops a little of the omega-3 they share with the flax.
  • Ripe bananas carry most of the sweetness, so the maple syrup can be cut back without anyone noticing.

Storage & reheating

These are built for the freezer from the start. Cool the muffins fully, keep a few in an airtight box in the fridge for up to 48 hours, and freeze the rest on baking day, as FSA guidance has it. Defrost overnight in the fridge and eat within 24 hours - the quick microwave revival in the method is their one reheat, so warm only what is being eaten.
