Method

  1. Pickle. Toss cucumber with vinegar and a pinch of salt; set aside.
  2. Glaze. Mix miso, maple and tamari; coat the salmon and roast at 200C for 12-14 minutes until cooked through.
  3. Bowl. Serve over rice with the drained cucumber, sesame oil and seeds. Cold leftovers make tomorrow's onigiri-adjacent lunch.
