Miso Salmon Rice Bowl with Quick-Pickled Cucumber

- 2salmon fillets (130 g each)
- 1 ½ tbspwhite miso
- 1 tbspmaple syrup
- 1 tbsptamari
- 150 gjasmine rice
- 1cucumber, thinly sliced
- 2 tbsprice vinegar
- 1 tsptoasted sesame oil
- 1 tbspsesame seeds

Method
- Pickle. Toss cucumber with vinegar and a pinch of salt; set aside.
- Glaze. Mix miso, maple and tamari; coat the salmon and roast at 200C for 12-14 minutes until cooked through.
- Bowl. Serve over rice with the drained cucumber, sesame oil and seeds. Cold leftovers make tomorrow's onigiri-adjacent lunch.
