Big-Batch Minestrone

A giant pot of vegetables, beans and pasta that feeds you for days - the food equivalent of someone helping out.

One session at the stove while someone else holds the baby, then days of lunches that reheat in minutes. The beans and dark greens are where the iron and folate on the tags come from, and a brothy bowl counts toward fluids without you having to remember a water glass.

Ingredients

for 2 people
  • 2 tbspolive oil
  • 1onion, diced
  • 2carrots, diced
  • 2celery stalks, diced
  • 2garlic cloves, minced
  • 400 gcanned chopped tomatoes
  • 240 gcooked borlotti beans
  • 1.2 lvegetable stock
  • 100 gsmall whole-wheat pasta
  • 100 gkale, chopped

Method

  1. Soften. Heat the oil in a large soup pot over medium heat. Add the diced onion, carrots and celery and cook, stirring now and then, for 8 to 10 minutes, until glossy and tender. Stir in the garlic for the last minute.
  2. Simmer. Add the chopped tomatoes, borlotti beans and vegetable stock. Bring to a boil over high heat, then lower to a gentle simmer - small bubbles, not a rolling boil - and cook uncovered for 10 minutes.
  3. Pasta. Stir in the pasta and simmer for 10 more minutes, still over gentle heat, stirring occasionally so nothing sticks, until the pasta is just tender with a slight bite - whole-wheat shapes take the full time.
  4. Kale. Add the chopped kale for the last 3 minutes, stirring it into the hot broth in the pot, until it softens and shrinks down but stays deep green. Ladle into bowls.

Is this safe while breastfeeding?

Yes - this is everyday food with nothing on any breastfeeding caution list, so it simply fits normal postpartum eating. If you are nursing, a brothy lunch is a quiet win: fluid needs run higher while breastfeeding, and NHS advice on breastfeeding and diet is to drink plenty and follow your thirst - soup counts toward that with no extra effort.

Substitutions & allergens

  • A gluten-free small pasta removes the gluten - add it fresh at each reheat, the same way the note handles freezer batches.
  • Cannellini beans or chickpeas stand in for the borlotti.
  • Spinach or savoy cabbage can replace the kale - stir spinach in off the heat.
  • No celery? Leave it out and let the onion and carrot carry the base.

Storage & reheating

For the fridge, cool it fast - shallow containers speed this up - then refrigerate within 1-2 hours and eat within 48 hours, reheating each portion steaming hot and only once, per FSA chilling guidance. For the freezer, the note already has the trick; just do the bagging on the day it is cooked, defrost in the fridge, and use within 24 hours of thawing, dropping fresh pasta in as it reheats.
