Creamy Salmon, Leek & Potato Bake

Salmon roasted over creamy leeks and potatoes in one dish - a DHA dinner with almost nothing to clean up afterwards.

A quiet, oven-does-it dinner where leeks and potatoes soften in a mustardy cream before the salmon joins for the final stretch. It fits the early postpartum weeks because the sequence is forgiving: long unattended stretches, no precise timing to hold in a tired head, and a result that feels far more looked-after than the effort suggests.

Ingredients

for 2 people
  • 2salmon fillets (140 g each)
  • 500 gbaby potatoes, halved
  • 2leeks, sliced
  • 2 tbspolive oil
  • 150 mllight cream
  • 100 mlvegetable stock
  • 1 tbspDijon mustard
  • 1lemon, half zested and juiced, half in wedges
  • 10 gdill, chopped

Method

Before you start. Heat the oven to 400°F (200°C).

  1. Roast. Toss the halved potatoes and sliced leeks with the olive oil in a large baking dish. Roast for 25 minutes, stirring once halfway, until the potatoes begin to soften and the leeks pick up golden edges.
  2. Cream. Whisk the cream, stock, mustard, lemon zest and lemon juice together in a measuring cup or small bowl until smooth, about 30 seconds. Pour the mixture evenly over the roasted vegetables.
  3. Salmon. Nestle the salmon fillets into the creamy vegetables. Return the dish to the oven for 14 to 16 minutes, until the fish is opaque throughout, flakes easily with a fork and reaches 145°F (63°C) at the thickest point.
  4. Finish. Scatter the chopped dill over the whole dish while it is still bubbling. Serve straight from the baking dish with the lemon wedges alongside for squeezing over.

Is this safe while breastfeeding?

Yes - salmon is one of the fish worth actively keeping on the menu while breastfeeding, not just tolerated. It counts as oily fish, so the rhythm to know is 1-2 portions a week, with a maximum of 2. Nothing else on the tray raises a flag: the cream is pasteurized, the mustard and leeks are unremarkable in the best way, and the fish roasts through to flaking.

Substitutions & allergens

  • Swap the light cream for an unsweetened oat cream - removes dairy; the mustard keeps the sauce lively either way.
  • Swap salmon for trout fillets - a like-for-like oily fish, so the omega-3 fit stays intact.
  • If fish is off the table entirely, chicken thighs roast well in the same cream - removes fish, but the omega-3 story is the reason this dish exists, so it becomes a different dinner.
  • Swap dill for parsley or chives, and leeks for onion and fennel if that is what the fridge offers.

Storage & reheating

Cool leftovers and refrigerate within 1-2 hours; eat within 48 hours, reheated until steaming hot all the way through and only once, per FSA chilling guidance. If that window will not happen, freeze portions on the day of cooking - the cream may loosen a little on thawing, and stirring as it reheats brings it mostly back. Defrost in the fridge, never on the counter, and eat within 24 hours.
