One-Pot Chicken, Lemon & Orzo

Chicken, orzo and greens simmered in one pot until the lemon and Parmesan turn the starch into sauce - under forty minutes, one pan to wash.

Silky orzo cooked right in the lemony stock alongside the chicken, so the flavor is built in rather than stirred through at the end. It is what the early weeks call for: soft, savory, genuinely comforting food that arrives without drama and feeds the house more than once.

Ingredients

for 2 people
  • 500 gboneless and skinless chicken thighs
  • 250 gorzo
  • 1onion, diced
  • 2garlic cloves, minced
  • 900 mlchicken stock
  • 1lemon, zest and juice
  • 100 gbaby spinach
  • 30 gParmesan, grated
  • 2 tbspolive oil

Method

  1. Brown. Warm the oil in a wide deep pot over medium-high heat. Brown the chicken thighs for 4 to 5 minutes a side, until golden, then lift them onto a plate. They finish cooking in the stock later.
  2. Soften. Turn the heat to medium. Cook the onion in the same pot for 4 to 5 minutes, stirring, until soft and translucent. Add the garlic for the last minute, until fragrant but not browned.
  3. Simmer. Add the orzo and stock and return the chicken with any juices. Simmer, uncovered, for 12 to 14 minutes, stirring often so the orzo does not stick, until the orzo is just tender and the chicken reads 165掳F (74掳C) with no pink inside.
  4. Finish. Take the pot off the heat. Stir in the lemon zest and juice, the spinach and the Parmesan, and keep stirring for about a minute, until the spinach has wilted into the sauce.
  5. Serve. Cut or pull the chicken into rough chunks and fold them back through the orzo. Let the pot rest for 2 minutes so the sauce settles, then serve in shallow bowls straight from the pot.

Is this safe while breastfeeding?

Yes - nothing in this pot is a breastfeeding concern: the chicken is cooked through, Parmesan is a hard cheese, and there is no caffeine or alcohol to think about around feeds. It simply fits normal postpartum eating - protein at the center and soft to eat, which is what the healing weeks ask for.

Substitutions & allergens

  • Gluten-free orzo or another small gluten-free pasta swaps in - removes gluten. Rice works too, but then the stricter rice storage rules below apply.
  • Leave out the Parmesan - removes dairy; an extra squeeze of lemon covers the finish.
  • Chicken breasts work in place of thighs; add them back a little later so they stay tender.
  • Frozen spinach is fine - stir it through straight from frozen at the end.

Storage & reheating

Cool and refrigerate within 1-2 hours; leftovers keep for 48 hours and reheat once, steaming hot all the way through, with a splash of stock or water to loosen the orzo - all per FSA chilling guidance. It freezes well on cooking day; defrost in the fridge and eat within 24 hours. If you made the rice version, the stricter rule applies: no more than 24 hours in the fridge and never reheat rice more than once.
