Caprese Skewers with Balsamic Glaze
Mozzarella pearls, tomatoes and basil on picks with a sticky balsamic drizzle - aperitivo hour, available in any timezone your day is running on.
Assembly rather than cooking: cold mozzarella, ripe tomatoes and basil threaded onto picks while the glaze reduces itself in a small pan. It fits the newborn stretch because it needs no plate, no cutlery and no timing - a fresh, salty-sweet bite built inside the gap between one thing and the next.

Method
- Reduce. Simmer the balsamic vinegar and honey in a small saucepan over medium heat for 2 to 3 minutes, swirling the pan, until the mixture is syrupy enough to coat the back of a spoon.
- Cool. Take the pan off the heat and let the glaze cool for about 5 minutes while you build the skewers - it thickens to a drizzling consistency as it sits.
- Thread. Thread a mozzarella pearl, a folded basil leaf and a cherry tomato onto each pick, repeating until everything is used up. Arrange the skewers on a serving plate.
- Drizzle. Drizzle the olive oil over the skewers, then zigzag the cooled balsamic glaze on top so it clings in dark ribbons. Finish with the flaky salt and serve cold.

Is this safe while breastfeeding?
Yes - nothing on these skewers carries a breastfeeding caution. The mozzarella is a pasteurized fresh cheese, which was fine even under pregnancy rules, and those rules have ended now anyway. Made fresh and eaten cold, this is as straightforward as snacks get.
Substitutions & allergens
- Plant-based mozzarella-style pearls keep the build intact - removes dairy, though the protein and calcium fit fades with them.
- Maple syrup does the honey's job in the glaze with the same sticky result.
- Any ripe tomato cut into chunks steps in when cherry tomatoes are not around.
- Store-bought balsamic glaze skips the reduction step entirely - one pan fewer.
Storage & reheating
These are a make-and-eat snack: once threaded, the tomatoes weep and the basil darkens, so assemble only what will be eaten in one sitting. The reduced glaze is the exception - it keeps in a jar in the fridge for the next batch. Spare mozzarella goes back into the fridge in its liquid within 1-2 hours, per FSA chilling guidance, and nothing here freezes.
