Garlic Butter Cod with Crushed Potatoes & Greens

For the months of trying, its value is how easy it makes the fish habit - no bones to fight, no strong flavor to talk a reluctant partner into, and the green vegetable is already built in.

  • 2cod fillets (150 g each)
  • 500 gbaby potatoes
  • 200 gbroccolini
  • 2 tbspbutter
  • 1 tbspolive oil
  • 3garlic cloves, sliced

Method

  1. Potatoes. Put the baby potatoes in a saucepan, cover with cold water and boil over high heat for 15 to 18 minutes, until a knife slides into the largest one with no resistance. Drain them well.
  2. Crush. Return the potatoes to the warm pan, pour over the olive oil and half the salt, and crush each one just until it splits, keeping them rough. Steam the broccolini for 4 to 5 minutes, until bright green and just tender at the stem.
  3. Cod. Pat the cod fillets dry and season. Melt half the butter in a nonstick skillet over medium-high heat and fry them for 3 to 4 minutes a side, until the flesh is opaque right through, flakes at a fork, and reads 145Β°F (63Β°C) inside.
  4. Baste. Lower the heat to medium, add the remaining butter, the sliced garlic and the lemon juice to the skillet, and spoon the foaming butter over the fish for 1 minute, until the garlic smells sweet and is pale gold.
  5. Plate. Serve the crushed potatoes and broccolini with a cod fillet set on top, spoon the garlic butter from the pan over everything, and finish with the chopped parsley, the black pepper and the lemon wedges.

Is this safe when trying to conceive?

Yes - cod is about as uncomplicated as fish gets. It is a white fish, which carries no weekly cap in the guidance, and it is nowhere near the high-mercury list (swordfish, shark, marlin) that FDA and EPA advice flags for anyone who might become pregnant. The butter is ordinary pasteurized dairy and the fish is cooked through to flaking. The note's suggestion to keep white fish in rotation alongside oily fish is the habit worth building now.

Substitutions & allergens

  • Swap the butter for olive oil throughout - removes dairy; add the garlic slightly earlier so it still toasts.
  • Swap cod for haddock or pollock - like-for-like white fish, so the iodine fit carries straight over.
  • Swap the tenderstem broccoli for green beans, regular broccoli or shredded kale - anything that steams quickly.
  • There is no swap that removes the fish and leaves the dish standing; if fish is out, pick a different recipe rather than fighting this one.

Storage & reheating

Best eaten fresh - basted fish never quite repeats its first outing - but leftovers are safe if handled by the standard rules: into the fridge within 1-2 hours, eaten within 48 hours, reheated once until steaming hot all the way through, per FSA chilling guidance. The crushed potatoes and greens come back better than the cod does, so reheat gently. Freezing is possible on the day of cooking but costs texture; defrost in the fridge and eat within 24 hours.
