Miso & Seaweed Rice Crackers with Edamame Dip

A vivid green edamame and miso dip with crisp seaweed rice crackers - the snack that quietly covers iodine, a nutrient most plans forget.

A soft edamame dip with miso and tahini, snipped nori over the top, and rice crackers to scoop. It is a five minute assembly job that happens to be one of the few genuinely reliable plant routes to iodine, which is otherwise an awkward nutrient to hit without dairy or fish.

Ingredients

  • 250 gfrozen edamame, podded
  • 1 tbspwhite miso
  • 1 tbsptahini
  • 1lime, juiced
  • 2 tbspolive oil
  • 1nori sheet, snipped small
  • 100 gplain rice crackers

Method

  1. Boil. Tip the frozen edamame into a saucepan of boiling water and cook over high heat for 4 to 5 minutes, until bright green and tender. Scoop out a cup of the cooking water, then drain.
  2. Blend. Put the drained edamame in a blender with the miso, tahini, lime juice and olive oil. Blend for about a minute, stopping once to scrape the sides down, until no whole beans remain. No blender: mash the edamame hard with a fork, then beat in the rest until it holds together.
  3. Loosen. Add the reserved cooking water a tablespoon at a time, blending between each, until the dip is smooth and thick enough to hold its shape on a cracker rather than run off it.
  4. Serve. Spoon the dip into a bowl, scatter the snipped nori over the top and set the rice crackers alongside. Covered in the fridge, the dip keeps for 3 days; stir before serving.

Is this safe when trying to conceive?

The nori is the part worth understanding rather than just eating. Seaweed is a real iodine source, but the amount varies enormously between products and species, and iodine is a nutrient where more is not better - the thyroid is as unhappy with too much as with too little. One snipped sheet over a shared dip is the intended dose and the reason the recipe stops there; this is not an ingredient to scale up or eat daily. Everything else in the bowl is everyday food with no restrictions attached.

Substitutions & allergens

Tahini is the sesame here: swap it for a smooth cashew or sunflower seed butter to remove sesame, keeping the same quantity. White miso and the crackers are where gluten can hide, so check both labels if that matters and choose a rice cracker that lists rice alone. Frozen peas stand in for edamame at a pinch, though you lose the protein. What you should not swap is the nori for a larger quantity of another seaweed such as kelp, which runs far higher in iodine.

Storage & reheating

The dip keeps in a covered tub in the fridge for up to 48 hours, chilled within 1 to 2 hours of making it. Keep the crackers and the nori separate until you serve or both go soft. It is not worth freezing: the texture turns grainy and it takes longer to thaw than to make again.
