Ginger-Lime Salmon Burgers with Slaw
Hand-chopped salmon burgers bright with ginger and lime, in buns with a crunchy slaw - the omega-3 answer to burger night.

Ingredients
for 2 people
- 300 gsalmon fillet, skinless
- 15 gfresh ginger, grated
- 1lime, zested and juiced
- 2spring onions, finely sliced
- 3 tbsppanko breadcrumbs
- 1egg
- 1 tbspolive oil
- 2wholemeal buns
- ΒΌwhite cabbage, shredded
- 2 tbspGreek yogurt

Method
- Chop. Finely chop the salmon by hand and mix with ginger, lime zest, spring onions, panko, egg and salt. Shape into 2 thick patties; chill 10 minutes.
- Cook. Fry in the oil 3-4 minutes a side until golden and cooked through.
- Slaw. Toss the cabbage with yogurt, lime juice and seasoning. Toast the buns and stack it all up.
