Method

  1. Wilt. Wilt the spinach in half the oil over medium heat; set aside.
  2. Cook. Whisk eggs with salt and pepper; cook in the remaining oil over medium-low, pulling edges inward until just set.
  3. Fill. Scatter spinach and feta over one half, fold, and serve with avocado.

Is this safe when trying to conceive?

Yes - while you are trying to conceive there are no pregnancy-style food rules in play yet, so the feta and the just-set eggs need no special handling. One folate point worth making: spinach counts toward it, but food folate supports rather than replaces the 400 ug daily folic acid supplement advised from before conception through early pregnancy. And this is a plate for both partners, not just hers.

Substitutions & allergens

  • Leave out the feta - removes dairy; season the eggs a touch more generously to compensate.
  • Chard or kale, wilted the same way, stands in for spinach and keeps the folate story.
  • No avocado? Sliced tomato on the side does the fresh, cool counterpoint job.
  • The eggs are the dish; there is no egg-free omelet worth pretending about, so pick another breakfast on egg-free days.

Storage & reheating

An omelet is a cook-and-eat dish: it turns rubbery in the fridge and does not freeze. If half genuinely goes spare, refrigerate it within 1-2 hours, eat it within 48 hours and reheat it only once, steaming hot, per FSA chilling guidance - but the better plan is simply to whisk fewer eggs next time. Slice the avocado only at serving.
