Method

  1. Split. Sit the dates on a board and run a small knife down one long side of each, cutting only halfway through, then open it out like a book. Check the pit is gone.
  2. Fill. Spoon about half a tablespoon of almond butter into each date, pressing it into the hollow with the back of the spoon. Pinch the sides closed so the filling shows as a neat stripe.
  3. Salt. Arrange the filled dates on a plate and top each with a few flakes of sea salt, pressing lightly so the flakes stay put in the almond butter rather than rolling off.
  4. Finish. For the chocolate version, melt the dark chocolate in a small bowl in the microwave in 15 second bursts, stirring between each, until pouring-smooth, then drizzle it over. Eat right away or chill for 10 minutes to set.

Is this safe while breastfeeding?

Nothing here carries a breastfeeding caution. If you add the optional melted dark chocolate, it brings a little caffeine with it, and the ceiling while breastfeeding is 200 mg a day, with some US guidance allowing around 300 mg - a tablespoon spread across eight dates sits far below that, though it stacks with your coffee. On the dates themselves, the recipe note is right to hedge: they have been studied around labor and recovery, and the honest summary is that they are dense, digestible energy, not a treatment.

Substitutions & allergens

Almond butter is the nut here: sunflower seed butter or tahini removes nuts entirely and both suit the salt. Any soft date works, though smaller varieties hold less filling and are fiddlier. Skip the chocolate to remove the caffeine question completely. A pinch of cinnamon or cardamom in the nut butter changes them enough to stop them getting boring by the end of the box.

Storage & reheating

They keep in a covered container in the fridge for up to five days, which is longer than most things here because dates are naturally low in moisture. Bring them back to room temperature before eating or the nut butter sets hard. They freeze well too: open-freeze on a tray, then bag them, and eat straight from frozen.
